Hi, I’m Rose, founder of Encinitas Honey. Born and raised in Encinitas, I grew up surrounded by the natural beauty of North County and have always felt at home among its gardens, wildflowers, and ocean breezes.
Before beekeeping I worked as a behavioral therapist, helping people grow and thrive. Over time I discovered a deep love for bees, their intelligence, their harmony with nature, and the sweet gift of honey they share. My early work with James McDonald of Encinitas Bee Company inspired me to cultivate my own identity in the bee world and deepened my commitment to caring for pollinators. What started as a passion became a mission to care for the bees, share their honey, and craft natural products that nourish both body and spirit.
As an environmental activist I have also worked to protect pollinators here in my hometown. I spoke at Encinitas City Council in support of pollinator-friendly practices which helped Encinitas officially become a Bee City.
I specialize in live bee removal, saving bees without poisons and relocating them safely so they can continue to thrive. Alongside this work, I create local raw honey, lavender bee balm, and other bee based products with the same care I give to my hives
Every rescue, every jar and every tin reflects the health of the bees, the beauty of Encinitas, and my belief in keeping things simple, natural, and good.
When you enjoy Encinitas Honey, you are not just supporting a local beekeeper, you are joining me in protecting pollinators and tasting the story of our land, our flowers, and the incredible bees that make it all possible.
